From our house to yours... Time for a wine cellar addition? The popularity of having immediate access to excellent wines has become ever increasing as the number of wine collectors and investors continues to grow. The wine cellars of today take their cue from the wine cellars of old. Wine storage began in the underground caves of Europe. These caves provided consistent storing conditions that allowed the wine to age at an elegant pace. Thus, the ideal wine cellar temperatures range between 55-58 degrees and relative humidity between 55 - 75%. That is why it is imperative to have your wine cellar built by a professional who is knowledgeable in the process of creating the perfect wine cellar atmosphere. Tip of the month: Custom wine cellars - Purpose: Wine cellars protect wines from potentially harmful external influences, providing darkness and a constant temperature and humidity. When properly stored, many wines not only maintain their quality but actually improve in aroma and flavor as they mature.
- Active cellars: Active wine cellars are highly insulated and need to be properly constructed with a foil backed - rigid foam vapor barrier. Minimum of 2 x 6 walls with R-19 insulation and “green board” is recommended. They also require specialized “conditioning” and cooling systems to maintain the desired temperature and humidity. A wine cellar should be placed in the coolest and most humid place in your home.
- Long term storage: Most wine racks are designed to allow a wine to be stored on it's side on a slight angle – thus, keeping the cork moist and also keeping the air bubble formed by a wine's ullage (unfilled airspace) at the top rather than the middle of the bottle. This allows for a slower and more gradual oxidation and maturation process. However, Champagnes tend to age better if they are kept upright. Heat, light and vibration are harmful to long term wine storage. An exterior grade door is essential. Redwood or western red cedar racks are recommended.
- Refrigeration: Split refrigeration is ideal for any wine cellar. Ductless split system wall mounted evaporator and a humidifier is one option. Another is a ducted refrigerator system which utilizes return and supply vents to maintain a constant temperature. Alarm modules are also used to ensure that the wine is kept at the perfect conditions for proper aging. Ducted or ductless will depend on what your area will allow.
- Flooring options: Pre-finished cork flooring is natural and durable. Porcelain tile, slate or limestone tiles are highly recommended. You can use inlaid mosaic for a special touch. Or perhaps, reclaimed wood from wine barrels – 5/8” thick, no two pieces are alike. Carpet is not recommended.
- Special lighting: Keeping the wine cellar on the dark side – with low lighting helps to preserve the wine. Florescent lighting is not recommended.

Glass enclosed cellars and rooms are highly unique and sought after by the sophisticated collector. A glass enclosed wine cellar provides a focal point from any adjoining room by drawing the eye to the racks and wine behind the glass. Glass must be 1/2” or more thick to maximize refrigeration and humidification benefits. To cut down on the light that enters, you may want to use polarized or tinted glass. These styles however, require more consideration when it comes to cooling systems.
